One for the dinner party: Salmon or Sea Trout pâté

Quick, easy and oh-so-simple to put together for a festive dinner party starter or as part of an entertaining buffet occasion.  This recipe works equally well with BigFish Brand Natural or Organic salmon fillets or our new Sea Trout.trout-pate-1


2 BigFish Brand Natural Salmon fillets OR Natural Sea Trout fillets

150g cream cheese

1/2 lemon, juiced

1 bunch fresh chives or dill, chopped

Sea salt and freshly ground black pepper



1.        Microwave the salmon fillets – remove outer packaging, pierce a hole in each pack and place on a microwaveable plate. Cook on full power for 4-5 minutes from frozen. Once cooked, leave to one side to cool, before flaking into chunks.

2.        Put the cream cheese, lemon juice, half the chives, half the cooked salmon and a pinch of salt and pepper into a blender and blend until smooth.

3.        Place the blended ingredients in a bowl, then add the remaining salmon and chives and stir to combine together.  Taste and adjust the seasoning as necessary. Place in a serving dish or individual ramekins and cover with clingfilm, storing in the fridge until ready to serve.

4.        Serve with miniature bagels, Yorkshire puddings or wholemeal toast, plus wedges of fresh lemon.
