Ocado has recently added a number of new products from our BigFish retail range to its online selection, including four lovely new frozen fish cakes together with frozen Smoked Salmon and Smoked Sea Trout. 

BigFish Smoked Sea Trout  is made using a close relative of the salmon: Oncorhynchus mykiss - a strain of rainbow trout that is slow grown at sea in Scotland.  This gives the fish a clean, marine flavour and firm flesh that is ideal for cold smoking. Both products are traditionally cured and oak smoked in Grimsby.  It is the first time that Ocado has listed a frozen smoked product. 

Since Smoked Salmon accounts for 32% of all salmon sales in the chilled sector, it is natural step to also offer the product in frozen where it can be priced more competitively.  Plus of course it is extremely popular at Christmas, making this an ideal listing for the festive season.

Smoked fish performs extremely well out of the freezer and is of comparable quality after defrosting to chilled.  JCS Fish Commercial Manager, Jack Coulbeck says, "It is worth noting that most chilled smoked salmon in retail has been previously frozen anyway, it is just defrosted for the chiller cabinet.  This gives an average shelf life of 10 days – by supplying frozen in the first place we help to preserve product quality and also achieve a shelf life of 12 months."
