BBQ Salmon with Mango Salsa & Corn

A lovely light recipe for summer eating.

BBQ Salmon with Sweetcorn


  • 2 BigFish Brand salmon fillets with BBQ marinade
  • 2 Sweet corn cobs

For the salsa

  • Ripe mango, peeled, stoned and diced
  • 1 Red chilli, de-seeded and finely chopped
  • Small bunch fresh coriander, chopped
  • 1 Lime, juiced and zested
  • Half tbsp olive or rapeseed oil


1. Remove the salmon fillets from packaging and loosely wrap in lightly oiled foil and bake on a baking tray in a pre-heated oven at 190ºc for 35-40 minutes (15-20 minutes if defrosted).

2. Lightly brush the sweet corn with oil and place under the grill or in the oven with the salmon fillets for 15 minutes.

3. To make the salsa, mix mango, chilli, coriander, lime and olive oil in a bowl and season. Leave in the fridge until ready to serve (keeps well overnight).
